Berkshire Fun

8/9: Amy and Chris invited us to share their 4th Anniversary Dinner, so...
Off to western Massachusetts Ms Dolphin went.

For Chris and I it was Seared Tuna, while Amy and Jan enjoyed Smoked Mozzarella Ravioli smothered in Roasted Red Peppers. Needless to say, Yum!

Then it was off to Emerald Lake State Park for a spot of camping.

The lake, which is Home to a lot of fish...

...is nestled in this beautiful Vermont setting.

Jan was moved to try kayaking. She and Lew both enjoyed this new experience.

Of course, with camping there are always Camp Chores.
Here Amy prepares to use her Birthday Present-a new gas grill...
...while Chris prepares a campfire for S'More making.

These yummy Kabobs were the result of Amy's efforts.
Red bell pepper, Marinated tofu and Onion (top)
and Marinated Portabella mushroom (bottom).

Then it was time for Vegan marshmallow, 70% chocolate and Organic graham cracker S'Mores.

Later, back in Williamstown it was time for Amy's non dairy Boston Cream Pie.

All too soon it was time for Lew and Jan to head back to the South Hills of Pittsburgh in time for Jan's first day of work.
So for a farewell traveling breakfast, Amy prepared Millet and Buckwheat Groat Waffles, which were soooo Yummy with fresh peaches and maple syrup.

And no, our time with Amy and Chris wasn't just about eating... There were lovely walks, a couple of fast 12mi Bike rides, some gaming, and lots of visiting.
